Our oven , nicknamed, Matilda , is at the heart of Mair’s Bakehouse. All our breads , buns, pastries and pasties are baked in the wonderful saturated heat of this amazing Retained Heat Oven .
The oven was designed by Alan Scott of Tasmania and built by John Davis and his great crew of Saron , West Wales.
The build took place when the Bakehouse was built in 2006- 2007 . The oven weighs around 10 ton . The Hearth , where the bread is baked is 7 ft deep by 5 ft wide ( 2130 x 1520 metric ) . As Retained Heat Oven’s go Matilda is probably the biggest in this country .
